Restaurant Owners Buy Farm to Supply Business With Local Products

For Roslyn Zecchini and her husband, David, much of their free time over the past year has been spent on a rustic, 65-acre farm in Galway.

The couple owns DZ Restaurants, which has four Saratoga County locations under its umbrella, including Broadway’s Boca Bistro, where Roslyn is executive chef.

That often frenetic environment is a stark contrast to their time at DZ Farm, which they purchased last fall.

Since then, the Zecchinis and staff from each restaurant have been in a crash course on everything from tilling soil to planting and harvesting.
