Saratoga restaurant group growing own ingredients

The groundwork for next summer’s menu specials was laid Monday at DZ Farm.

Staff from DZ Restaurants’ four eateries — Chianti Ristorante, Forno Bistro and Boca Bistro in Saratoga Springs and Pasta Pane in Clifton Park — were up and at it early, their breath visible in the cold as they turned over soil, raked it smooth and installed raised garden beds.

As they worked, they spoke of the produce that will spring from the soil next season and the dishes that will be brightened by it.

The scenic 65-acre farm is DZ Restaurants’ latest culinary endeavor. Company owners David and Roslyn Zecchini purchased the Galway property last November with the intention of growing produce for their restaurants.
